Jerusalem artichoke: Properties and benefits

Jerusalem artichoke is a tuber known above all for its low glycemic impact which makes it a precious food for diabetics. It has a strong satiating power and is therefore suitable for “taming” states of continuous hunger. It has probiotic properties and is therefore able to promote the development of a healthy intestinal flora. It also appears to have the ability to stimulate intestinal transit and renal activity which makes it an excellent “bleeder” for our body (it promotes the expulsion of toxins from our body through the action of the excretory organs which helps to stimulate ). It also has the ability to regulate blood pressure, preventing hypertensive states that are harmful to the well-being of the cardiovascular system as a whole. Contains vitamin A (useful for the well-being of the skin and vision), vitamin C (powerful antioxidant) and vitamin K (especially beneficial for the heart and cardiovascular system). It is also a good source of mineral salts (sodium, potassium, calcium, magnesium, iron, copper, selenium etc.) which makes it an excellent tonic for our body. It can be consumed raw, in salads, combined with other tubers and vegetables with a strong antioxidant action (cress, garlic, potatoes, lettuce, leeks, etc.).
